Here is the perfect FFA dry sausage: farm pork, no added nitrite salt. Beautiful red flesh and just the right amount of fat, coarsely grated. Nitrites are preservatives that slow down the drying out of the sausage. To prevent it from drying out too quickly, it is vacuum packed.

INGREDIENTS: Pork from farms in the South West with PGI, pork from farms in France, bacon, salt, pepper, lactose and sugar (used exclusively for fermentation), preservative: Swiss chard powder, dried carrots, natural ferments. Natural pork intestine.
PRODUCTION: Made in Tarn.
STORAGE: Instructions for use of sausage without added nitrite salt: Our sausages are vacuum packed to maintain quality during transport. We recommend that you remove the sausage from the packaging before tasting and let it dry in a cool, dry place for 24 to 48 hours. Best before: see label.
