The wine has a light and ethereal mousse, followed by a string of fine and lively bubbles that nourish a delicate rim. The Champagne has a deep and majestic color, with a satiny and very fluid appearance, a bright gold with intense golden yellow highlights that enhance the visual pleasure and captivate the eye.
The aromas reflect the wine's time in the cellars and the resulting slow aromatic development. Pastry notes dominate, with roasted caramel, mocha, dark chocolate, and praline, intermingled with notes of beeswax, toasted aromas, warm mirabelle plums, candied apricots, and roasted figs. After aeration, the Champagne's character fully unfolds, with spicy notes where rosemary blends with ginger, pepper, and cumin, along with hints of plum, damask rose, macerated apple, marzipan, musk, and gingerbread.
The palate: The initial touch on the palate is soft with a fine, creamy effervescence. The champagne develops a fruity character in which all the substances are concentrated, creating a feeling of true fullness as it approaches a climax. The orangey freshness and chalky resonance in the finish prolong the pleasure. The champagne unfolds in the finish, delivering a juiciness fused with a savory dryness that coats the back of the mouth with a refined texture.
